Cider-Roasted Sweet Potatoes

Makes 8 servings
- 6 medium sweet potatoes (about 3 pounds), sliced into 8 wedges each
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/3 cup unsweetened apple cider
Heat oven to 400º F. Toss together potato slices, oil, cinnamon, salt and pepper in a large bowl. Transfer to a large baking dish and drizzle with cider. Roast until lightly browned and cooked through, about 30 minutes.
