Cider-Roasted Sweet Potatoes

Prep: 10 minutes
Cook time: 30 minutes
Makes 8 servings

  • 6 medium sweet potatoes (about 3 pounds), sliced into 8 wedges each
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup unsweetened apple cider

Heat oven to 400º F. Toss together potato slices, oil, cinnamon, salt and pepper in a large bowl. Transfer to a large baking dish and drizzle with cider. Roast until lightly browned and cooked through, about 30 minutes.
