Apple Raisin Flapjacks

Ingredients

    • 3 egg whites
    • 1 cup fat-free milk
    • 2 cups reduced-fat buttermilk baking mix
    • 4 medium Granny Smith apples (peeled, cored, and coarsely chopped)
    • 1 cup raisins
    • 1/2 tsp nutmeg

Directions

In large bowl, whisk egg whites until foamy; whisk in milk, then stir in baking mix. Add remaining ingredients; mix just to blend.

Coat griddle or heavy skillet with vegetable cooking spray; heat over medium heat. Portion batter onto griddle with 1/4-cup measure. Cook until nicely browned, turning once, about 3 minutes on each side.

Serve hot with maple syrup or non-fat yogurt.
