Scallops with Spicy Papaya Sauce

Ingredients

    • 1 small papaya, peeled, seeded, and chopped
    • 1 red bell pepper, chopped
    • 1 tsp minced jalapeno peppers
    • 1/2 red onion, chopped
    • 2 Tbsp fresh lime juice
    • 1 Tbsp chopped fresh cilantro
    • 2 Tbsp all-purpose flour
    • salt and pepper to taste
    • 1 lb sea scallops
    • 1 Tbsp olive oil

Directions

In a medium bowl, combine papaya, red pepper, jalapeno, onion, lime juice, and cilantro. Set aside. In a large re-sealable plastic bag, combine flour, salt, pepper, and scallops, and shake to coat.

In a large skillet, heat oil over medium heat and add scallops; cook and stir until golden. Place scallops over papaya sauce, and serve immediately.
