1-1/2 lb. bread machine: Put 1-1/8 cups warm tap water into machine. Locate and remove the enclosed yeast packet. Then add the contents of this package, 2 Tbsp. canola (or other) oil, and contents of the yeast packet. Put machine on basic white bread or medium setting. Turn on machine. Now enjoy this wonderful, moist potato bread.
By hand for conventional ovens (this package makes 1 loaf): Locate and remove the enclosed yeast packet. Add contents of the yeast packet to the mix. Combine mix, 2 Tbsp. canola (or other) oil and 1-1/8 cups warm tap water. Knead 8-10 minutes. Place in a greased bowl, cover and let rise in a warm place until doubled (approx. 1-1/2 hrs). Punch down, cover and let rise until doubled (approx. 30-40 min). Form loaf and place in a greased 9 x 5 x 3 bread pan. Grease top of loaf. Cover with plastic wrap and let rise in a warm place until doubled (approx. 45 min). Bake at 375° for 30-40 minutes. Thump top of loaf. A hollow sound indicates a properly baked loaf. Turn out of pan, cover with a towel and cool before slicing.
