Basic cooking instructions: To cook lentils, simply pick over to remove debris, rinse and drain. Cover 1 cup lentils with 3 cups water or broth and bring to a boil. Reduce heat and simmer for 10-15 minutes or until tender. Serves four. Despite use of modern agricultural equipment, it is not always possible to remove all foreign material. Sort and rinse before cooking. Keeps best refrigerated or frozen.
