Beans, peas, and lentils are natural agricultural products. Despite use of modern agricultural equipment, it is not always possible to remove all foreign material. Sort and rinse before cooking. Wash 2 cups soup mix, then soak overnight. In the morning drain, rinse and bring 2-1/2 qts. water to boil with the beans and a ham hock. Reduce heat and simmer 3 to 3-1/2 hours. Add 1 cup chopped onion, one 15 oz. can tomato sauce or 1 qt. tomatoes, 1-1/2 tsp. to tbsp. chili powder, according to preference, and 2 tsp. garlic powder or 2 cloves of garlic minced. Simmer 30 minutes. Makes about 8 to 10 servings. Keeps best refrigerated or frozen.
