This reduced calorie mix has 1/3 fewer calories than regular mousse and only 70 calories per serving (prepared with skim milk). Each 2 oz. envelope makes five 1/2 cup servings.
Diabetic exchange: one 1/2 cup serving is approximately equal to 1/2 low fat milk exchange.
For one 9 inch pie: Pour 2 cups (16 fluid ounces) very cold skim milk into a mixing bowl. Add the contents of 2 envelopes. Using an electric mixer, blend on lowest speed until mix is blended. Slowly increase the mixer speed until highest speed is reached, whipping for a total of 5 minutes. Pour into a 9-inch prepared pie crust and refrigerate 2 hours before serving. Mousse - for one envelope: Pour 1-1/2 cups (12 fluid ounces) very cold skim milk into a mixing bowl. Add the contents of 1 envelope. Using an electric mixer, blend on lowest speed until mix is blended. Slowly increase the mixer speed until highest speed is reached, whipping for a total of 5 minutes. Pour into 5 dessert dishes and refrigerate 2 hours before serving. Parfaits: Prepare 1 envelope each of your two favorite mousse flavors.
